Asaro (Yam Pottage) with Shredded Chicken

Prepared with predominantly yams, and vegetables.

Ingredients

  • 1 medium Yam
    1 large Onion
    2 large red bell peppers
    3 tomatoes
    2 habanero peppers
    1/2 Cup Palm Oil
    2 tbs IHOF all purpose savoury seasoning
    1 tbs IHOF garlic, pepper and herbs
    1tbs ground crayfish (optional)
    1/2 lb Boneless chicken breast (or any chicken part)
    Parsley or any Leafy vegetables
    Salt to taste

Instructions

  1. Place sliced onion, tomatoes, peppers in a pot with 1/2 cup water and boil till reduced, strain out excess water and blend, set aside
  2. Boil the chicken breast with the IHOF seasonings, until very tender, then strain and reserve stock, shred chicken using a fork and set aside.
  3. Peel and cut yam into bite sized chunks, place in a pot along with the blended pepper mix, crayfish, chicken stock and palm oil and boil till soft (approx 20 mins)
  4. Adjust for water and salt if necessary, Stir to break up some of the yam chunks to give that ‘pastey’ effect.
  5. Reduce the heat to low add vegetables if using any and simmer for a few more minutes
