A recipe to celebrate black history month and valentines day
Ingredients
- 1 pound Japanese Sweet Yams or regular yams (if using regular yams, add about 1 tbs sugar)
2 Beef Steaks (Preferably Sirloin)
Salt to taste
4 tsp IHOF All Purpose Original seasoning
4 tsp IHOF Garlic and Peppers seasoning
1 medium carrot
2 small beets
2-3 tbs Milk or Heavy cream (Optional)
2 tbs Unsalted butter
Sweet bell peppers (Yellow, Green, Red)
Olive oil (or any oil of choice)

a) Cut yam into tiny cubes, and boil till very soft (till it falls easily off a fork)
b) While still hot, place boiled yam in a blender or food processor, add some salt, the milk or heavy cream (or use water), with the butter and blend till smooth. (A whisk can also be used for this)
c) Set aside - Roasted Vegetables
a) Clean your carrots, beets and bell peppers, toss with some olive oil and 2 tsp each of the IHOF All purpose and Garlic seasonings
b) Roast in a preheated oven (using the grill setting) at 400 deg F for 10-15 minutes (may be longer or shorter depending on your oven) - Steak
a) Season your steaks with the remaining IHOF seasonings and salt, let sit for about 10 minutes
b) In a saucepan, heat up some oil (using medium heat, this takes about 2 minutes), add the seasoned steaks and cook for 4 minutes, flip over and cook for another 3 minutes, basting occasionally. (Please note: this is for medium rare. Cook the steaks longer for a greater degree of doneness).
c) Remove the steaks from the pan and let rest a few minutes before serving
