Jollof rice is a popular rice dish in many West African countries. The main ingredients of jollof rice are rice and tomatoes; neither has any saturated fat or cholesterol.

  1. Wash and boil rice on medium-low heat for 10mins with 2 teaspoons each of all-purpose savoury and garlic, peppers and herbs. Make sure rice is not fully cooked, and is still firm. Set aside and remove lid to cool and to avoid steam, cooking the rice.
  2. Blend the tomatoes, onions, pointed pepper, and 1 teaspoon of hot pepper mix. Mixture should give you 1.3litres of sauce, divide in 2, and save half to make sauce. The other half cook half with in ½ a cup of oil, on med-high heat for 6mins, then add 2 teaspoons each of barbeque seasoning and all-purpose original, and cook for another 5mins, then add ¼ a cup (60ml) of tomato paste. Cook on medium heat for 5mins.
  3. Mix the half-cooked rice with the cooked tomato sauce, add 2 table spoons of oil, and 1 cup
    (235ml) of water, and leave on simmer. Before putting the lid back, cover with aluminum foil, and place the pot lid over it for maximum steam. Leave for 15mins, mix again add 2 table spoons of oil, a bit of water if rice not yet cooked. Leave for another 10mins, then switch off and remove from burner to cool.
