Sauteed Shrimps and Plantain

Ingredients

  • 300g Shrimp
  • 1 medium ripe plantain (diced)
  • 1/2 of one small onion (chopped)
  • 1/3 of one small bell pepper (chopped and in any colour)
  • 2 tsp each of IHOF all purpose savoury, garlic peppers and herbs, and hot pepper mix. (You can add more hot pepper mix if you decide)
    Oil for frying

Instructions

  1. place a pan on medium high heat, add some oil (enough to fill the pan a third way up), place the plantain, and fry till golden brown.
  2. Reduce the oil to about 3 tablespoons, add the shrimp, onion, bell pepper and seasonings, and sauté for 3–4 minutes, stirring continuously
  3. Add the fried plantain and let cook for another 1-2 minutes.
    Serve hot!
