Sauteed Shrimps and Plantain
Ingredients
- 300g Shrimp
- 1 medium ripe plantain (diced)
- 1/2 of one small onion (chopped)
- 1/3 of one small bell pepper (chopped and in any colour)
- 2 tsp each of IHOF all purpose savoury, garlic peppers and herbs, and hot pepper mix. (You can add more hot pepper mix if you decide)
Oil for frying
Instructions
- place a pan on medium high heat, add some oil (enough to fill the pan a third way up), place the plantain, and fry till golden brown.
- Reduce the oil to about 3 tablespoons, add the shrimp, onion, bell pepper and seasonings, and sauté for 3–4 minutes, stirring continuously
- Add the fried plantain and let cook for another 1-2 minutes.
Serve hot!
