Serve with rice or any side of your choice
Ingredients
- 300 g shrimp (cleaned head and tail off)
- 3 tbs finely diced onion
- 2 tbs finely diced tomato
- minced fresh parsley
- Olive oil
- Juice of half lime
- 2 tsp curry powder
- 1 cup good quality coconut milk
- 1 tsp each of IHOF All purpose savoury, Garlic, Peppers and herbs, Hot pepper mix
Instructions
- See how: Rub the lime juice and a pinch of the spice mix into the shrimp and set aside for about 15 minutes
- In a pan, heat up some olive oil and sauté the shrimp for about 2-3 minutes over medium heat (be careful not to burn them), then remove the shrimp from the pan
- In the same pan, add the onions and fry till translucent , add tomato, the rest of the seasonings/curry powder and fry for 5 minutes (stirring continuously)
- Add the coconut milk and cook 5 minutes, add the shrimp and simmer for another 2-3 minutes
- Turn off heat and finish off with some chopped parsley
Serve as is, or with some rice or potatoes
